Sarah Lambert Freeman founded Hive & Hollow in 2018 but has worked in floristry for over 25 years. She started her career at Crocus Hill Flower Market in St. Paul and later went on to open Sassafras, a sought-after floral event studio in Minneapolis. A desire for a change of pace and a way of doing floristry differently led her family to purchase a five-acre wooded plot of land on the bluffs of the Red Cedar River in 2018, where they now grow and harvest many of their own flowers. A few years later, she opened Hive & Hollow, which has blossomed into two full-service flower shops, providing home-grown and sustainably sourced blooms to the Chippewa Valley.
Our design aesthetic is organic, whimsical, wild, and structural - and always rooted in nature.

Hive & Hollow provides full-service wedding florals for events throughout Eastern Minnesota and Western Wisconsin. We work with our couples to craft a vision to transform the space, utilizing stunning local blooms, so you can enjoy the beauty of fresh flowers while supporting a larger movement focused on people, practice, and community. Below are some of our frequent services:
- Floral and styling consultations and planning, including design decks and venue visits
- Hollow farm planting based on vision and local growing season
- Delivery and set-up
- Personal flowers (bouquets, vased arrangements, corsages, boutonnieres)
- Ceremony flowers, including those for structures (chuppah, arch, etc.)
- Hanging installations
- Reception flowers provided in a wide variety of vessels available through our rental collection
- Candles, including vases and stands from our rental collection
- Removal of rentals and composting of flowers on the Monday following your wedding

Sustainability is at the heart of everything we do at Hive & Hollow. The international cut flower business has historically helped destroy communities and ecosystems worldwide- but it doesn’t have to be this way. There is a growing sustainable floral movement, and we are honored to be a part of it. When you choose Hive & Hollow, not only are you selecting an award-winning woman-owned small business, but you are also supporting our work in setting a new standard for the floral industry.
Wedding florals from Hive & Hollow are primarily grown on our flower farm- however, we also partner with local growers in the area to bring a wide and stunning selection of blooms for your special day. All roses are from our Fair Trade farm partner. For weddings during the winter months, we utilize US-grown flowers. If you have specific blooms in mind, we are more than happy to incorporate them, but we will utilize a sustainable source.

The long and short of it is that pricing varies tremendously. All events are priced on an individual basis, taking into consideration the growing season, type of blooms, and availability. You can generally expect to spend around $2,000 for smaller weddings and between $5,000-$10,000+ for weddings that include larger installations. For delivery and set-up outside of our normal delivery area, we have a $2,500 minimum. However, you can always have a friend pick up your flowers from our store. After that, we will set up a consultation to create a vision for your space. Our team will crunch numbers and build a design deck which you can expect in the coming days. Once you approve the proposal, you’re ready to sign our contract and pay a deposit to secure your date!
